"Never before have I seen so many cooking sites sharing so many creative leftovers recipes. This recipe from Taste of Home is esp family & kid-friendly IMO. Pauline Porterfield of Roxboro, No Carolina was credited & had this to say: "If you love stuffing, you won’t be able to get enough of these fun muffin cups. They are a taste of Thanksgiving in ea bite!" I modified the recipe slightly, so pls read my NOTE at the end of the Prep Steps. Times do not include 10 min standing time. ENJOY!"

Step by Step Method

Step 1

Preheat oven to 425F. Press stuffing onto bottom of 8 greased muffin cups. Layer w/veggie (if using - See NOTE below) & turkey. In a sml bowl, combine mashed potatoes & cheese. Spoon over turkey.

Step 2

Bake 15 min. Reduce oven setting to 350F. Bake 15-20 min longer or until potatoes begin to brown. Let stand 10 min.

Step 3

Run a knife around sides of muffin cups to remove muffins. Serve w/gravy.

YIELD: Yield is 8 muffins or 4 servings of 2 muffins per person.


NOTE FROM ME: As written, the recipe included the use of green beans as the 1st layer on the stuffing, but I know your holiday meal may well include corn or another veggie, so consider that an optional add.
