Step by Step Method
Step 1
Preheat oven to 325 °F. (position oven rack next to lowest or middle rack, baking time may take longer if positioned in middle).
Step 2
Halve avocados lengthwise and pit. Gently scoop out flesh. Drizzle shells with lemon juice. Set aside.
Step 3
Dice avocado flesh and place in bowl. Drizzle with lemon juice and season to taste with salt and pepper. Stir in nuts, cheddar cheese and Parmesan cheese, parsley and tomatoes. Fill avocado shells with mixture.
Step 4
Sprinkle each stuffed avocado with bread crumbs then drizzle 1-2 tsps melted butter over breadcrumbs. Top with a pinch of paprika. Place on a grease baking sheet or pan. Bake for 15 minutes. Remove from oven and serve immediately.
