Step by Step Method

Step 1

Soak tapioca in room temperature water overnight. Drain.

Step 2

Heat milk in a double boiler until warm, add drained tapioca and milk.

Step 3

Cover, turn heat to very low and cook for one hour. Stir occasionally.

Step 4

Watch to make sure that the mixture doesn’t boil.

Step 5

It will boil over very easily and also has a tendency to burn on the pan bottom if care is not used.

Step 6

Beat egg yolks and sugar together.

Step 7

Add a little of the hot mixture to the egg mixture and blend thoroughly. (Tempering)

Step 8

Then add the egg mixture to the hot milk mixture, stirring( whisking too)constantly.

Step 9

Reheat over medium heat and cook while stirring until tapioca mixture is very thick, about 15 minutes.

Step 10

Beat egg whites until stiff.

Step 11

Fold egg whites into hot tapioca mixture.

Step 12

Stir in vanilla, and then gently stir the sliced strawberries into the hot tapioca.

Step 13

Chill and then serve.
