"Found @ thecookierookiedotcom yesterday, this is the 2nd of 2 recipes by food blogger Becky Hardin that I wanted to share. She said this recipe was "born" when Nabisco asked her to create a recipe for Triscuit crackers. She had just returned from Spain & loved the tasting & sharing of food while dining tapas-style. This is clearly a good way to do that .. Easy-fix bites of goodness while you mingle & sip your favorite Riesling works for me! ENJOY!"

Step by Step Method

Step 1

Spread 1 tbsp of mascarpone on ea of the 2 Triscuit crackers.

Step 2

Top ea cracker w/a basil leaf & then 1 tbsp diced strawberries.

Step 3

You're done & now can ENJOY paired w/a glass of your favorite white wine.

Step 4

NOTE: Becky also mentioned how easy it is to go savory or sweet w/this. I'd go sweet by adding powdered sugar to the mascarpone, changing to fresh mint used w/fruits in season. Strawberries, blueberries, peaches (or a mix) = Fruity Cheesecake Triscuit Bites. Pineapple & coconut works too. :-)
