Step by Step Method

Step 1

Heat the oven to 350 degrees Fahrenheit. Grease and flour an 8 1/2 X 4 1/2 loaf pan.

Step 2

In a large bowl, mix together the sugar, eggs, vanilla, oil, and yogurt.

Step 3

In a separate bowl, mix the 1 1/2 cups flour, baking powder, and salt. When done, add it to the other bowl, stirring it together.

Step 4

Cut up the strawberries into little pieces and cover them with the one tablespoon of flour. Fold them into the batter, leaving out two or three to place on top.

Step 5

Pour the batter into the greased pan, then place the reserved strawberries on top.

Step 6

Bake for 50 minutes to 1 hour, or until a fork or toothpick inserted in the middle comes out clean.

Step 7

If you feel that your bread is getting too brown during baking, cover it with some aluminum foil during baking.

This is a lovely breakfast bread which we all enjoyed. I made to use up some strawberries which were definitely past their prime and also my yogurt was past its expiration date -- but both worked perfectly in this bread which everyone enjoyed. Thanks for sharing!

Daily Inspiration

This strawberry bread came out really tasty and moist. Had to make a couple of changes -- no fresh strawberries this time of year so I used frozen strawberries (thawed) instead. I also used vegetable oil vs. olive oil and I accidentally only added 1/2 cup sugar. The bread was perfectly sweet enough for us so I was happy to make the mistake. LOL Definitely a bread I will make again and it's good to know that the frozen strawberries worked -- I still added the flour to soak up the excess liquid. Made for WOTM tag game.
