"This recipe peps up the usual plain scrambled egg. It is not really spicy but you may make it as hot as you like by adding more jalapeno. I like to serve them with chili sauce on top but if you like hotter add your favorite hot sauce on the finished eggs The recipe was originally from a health magazine from a local Health Food Store. I have tweaked the recipe so it is still healthy but quite different from the original recipe. Repeat for two servings."

Step by Step Method
Step 1
Beat the eggs, cottage cheese and mixed herb together.
Step 2
Heat a lightly oiled skillet, medium heat, and stir fry the onions, jalapeno & mushroom (if using) for about 3 minutes.
Step 3
Pour in the eggs keep temperature to moderate.
Step 4
As the eggs startto cook gently stir them, repeat until they are just firm.
Step 5
Do not over cook the eggs
