Spicy Leftover Meatloaf Soup

Step by Step Method
Step 1
Place olive oil in a large saucepan. Heat on medium and add peppers and onions. Saute until softened. Add minced garlic and finely chopped rosemary. Stir in for 30 seconds. Add spices and stir for 1 minute. Add cubed meatloaf, beef stock and water. Stir. Bring to a boil. Reduce heat and simmer for 45 minutes till all flavors bloom. Taste. If it's too spicy, just add a teaspoon or two of sugar and let dissolve. Serve with quartered soft taco shells or some nice crusty bread.
