Spicy Leftover Meatloaf Soup

"Had a lot of meatloaf leftover. So I cut some up and mixed it with fresh veggies, beef broth and spices to make a delicious soup. Note: sodium content listed isn't even close to actual. NOTE: Meatloaf not included in Nutritional Facts"

Step 1

Place olive oil in a large saucepan. Heat on medium and add peppers and onions. Saute until softened. Add minced garlic and finely chopped rosemary. Stir in for 30 seconds. Add spices and stir for 1 minute. Add cubed meatloaf, beef stock and water. Stir. Bring to a boil. Reduce heat and simmer for 45 minutes till all flavors bloom. Taste. If it's too spicy, just add a teaspoon or two of sugar and let dissolve. Serve with quartered soft taco shells or some nice crusty bread.
