Ingredients

The ingredients are:
  • 8 ounces meatloaf ( leftovers, cold, cut into 1" cubes)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 small red bell pepper, chopped
  • 1 small green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 sprig fresh rosemary, finely chopped
  • Lawry's Salt-Free Southwestern Sweet and Smoky Spice Blend (2 teaspoons)
  • 1/4 teaspoon lemon pepper
  • 1/4 teaspoon salt (or lite-salt, more or less to taste)
  • 4 cups beef stock (unsalted)
  • 4 cups water

How to Make

  • Step 1: Place olive oil in a large saucepan. Heat on medium and add peppers and onions. Saute until softened. Add minced garlic and finely chopped rosemary. Stir in for 30 seconds. Add spices and stir for 1 minute. Add cubed meatloaf, beef stock and water. Stir. Bring to a boil. Reduce heat and simmer for 45 minutes till all flavors bloom. Taste. If it's too spicy, just add a teaspoon or two of sugar and let dissolve. Serve with quartered soft taco shells or some nice crusty bread.
