Step 1

Soak the beans overnight

Step 2

The next day, drain the beans and add fresh water to a 2 inch level above the beans.

Step 3

Add the pork, cover, and simmer over low heat ,do not boil

Step 4

Until just tender, about 1 hour.

Step 5

Drain, reserving 2 cups of the bean liquid.

Step 6

Preheat the oven to 300 degrees.

Step 7

Pour the beans into a 2 quart casserole dish.

Step 8

Combine the remaining ingredients and add to the beans.

Step 9

Mix well, then cover and bake for an hour.

Step 10

If necessary, add the bean liquid during cooking to thin.
