Step 1: Soak the beans overnight
Step 2: The next day, drain the beans and add fresh water to a 2 inch level above the beans.
Step 3: Add the pork, cover, and simmer over low heat ,do not boil
Step 4: Until just tender, about 1 hour.
Step 5: Drain, reserving 2 cups of the bean liquid.
Step 6: Preheat the oven to 300 degrees.
Step 7: Pour the beans into a 2 quart casserole dish.
Step 8: Combine the remaining ingredients and add to the beans.
Step 9: Mix well, then cover and bake for an hour.
Step 10: If necessary, add the bean liquid during cooking to thin.
