"Easy meal and everyone usually loves this. I usually make it into a casserole, and put finished product into into a greased casserole dish, then add the cheese to the top and bake until cheese melts and starts to brown."

Step by Step Method

Step 1

Brown ground beef with onions and bellpepper. Drain grease.

Step 2

In a dutch oven prepare both boxes of rice a roni to box directions.

Step 3

When rice mixture comes to a boil, add hamburger with onions and bell pepper to rice, add in cans of corn and cajun seasoning. Bring mixture to a boil and cover. Lower heat and simmer for 20 minutes. Stir often to prevent rice from sticking. When rice is done, add cheese, stir and serve!

Step 4

If you want more of a casserole type dish, before adding cheese, put into a 9x13 pan and then cover that with cheese. Bake at 350° for 20 minutes.

I made this recipe on 8/26/13 for WEEK 13,the Mexican Recipes portion of the " Summer Vacation Tour ". Since it was just my SO and myself,only half of the recipe was made.Due to what was on hand some changes were made to the recipe and they are as follows. I browned the full amount of ground beef,with about 3/4 cup finely chopped sweet onion.Instead of the bell pepper, I used 1/8 cup of red/green dehydrated bell pepper. And after draining the beef mixture,instead of dirtying another pan I just went ahead and cooked the rice in the same pan. When the rice was almost done,the seasoning packet & Cajun seasoning was added and stirred well. As for the tomatoes, a small can of Ro-Tel was used.Instead of the canned corn I used some corn which I had scrapped off some leftover corn on the cob.Since I thought there was enough spice and heat after a " Quality Taste Test " the hot sauce was omitted. I just served it from the skillet and added cheese to each serving. And I needed to modify my review I wanted to say, " I'm very pleased to be the first one to rate and review this recipe. :) Thanks for posting and, " Keep Smiling :) "
