Step by Step Method

Step 1

Preheat your grill to medium-high heat.

Step 2

Scrub the Russet potatoes clean and pat them dry. Cut the potatoes into thick slices or wedges.

Step 3

In a large bowl, combine the sliced potatoes, dried minced onion, granulated garlic, olive oil, smoked paprika, ground cumin, dried oregano, salt, and black pepper. Toss everything together until the potatoes are evenly coated with the spices and seasonings.

Step 4

Place the potato mixture on a large sheet of aluminum foil. Fold the foil over the potatoes to create a packet, sealing the edges tightly.

Step 5

Place the foil packet on the preheated grill and cook for about 15-20 minutes, or until the potatoes are tender and cooked through. You can gently open the foil packet to check the doneness.

Step 6

Carefully remove the foil packet from the grill and open it up. Be cautious of the hot steam that will escape.

Step 7

Transfer the grilled potatoes to a serving dish. Sprinkle with fresh chopped parsley, if desired.

I was really surprised with how good these came out...the cook time was spot on...I cut them into wedges...we loved the flavor and the ease of preparation...made for "Billboard" tag game...

Oh so yummy. I made 3 packets with 3 potatoes and chose to slice the potatoes into rounds, then cut them in half. I cooked the packets of potatoes for about 35 minutes and thought they were done perfectly. Great flavor from a nice blending of spices. Thanks for an easy side dish for our grilled chicken tonight!
