Step by Step Method
Step 1
Saute the celery and onions in a stockpot with the oil.
Step 2
Add carrots, garlic and paprika.
Step 3
Add vegetable broth and chickpeas.
Step 4
Add herbs and season to taste.
Step 5
Simmer covered 30 minutes until carrots are soft add a splash of vinegar and stir in parsley.
