  • 4 cups vegetable broth
  • 15 ounces chickpeas (1 can)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Garnish
  • 1 tablespoon white wine vinegar
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Saute the celery and onions in a stockpot with the oil.

  • Step 5: Simmer covered 30 minutes until carrots are soft add a splash of vinegar and stir in parsley.
