Step by Step Method
Step 1
Bring large pot of salted water to a boil. Cook spaghetti according to package directions, reserve about 1 cup pasta water, then drain.
Step 2
While pasta is cooking, in a large skillet over medium heat, combine oil, garlic and red pepper flakes, cook, stirring often, until just beginning to turn golden, 2-3 minutes. Be careful not to let garlic burn.
Step 3
Add drained spaghetti to skillet, and toss to evenly coat. Add reserved pasta water a little at a time, stirring until desired consistency is reached.
Step 4
Season with salt and pepper, to taste. Stir in parsley and lemon zest.
Step 5
Serve immediately, topped with cheese, if desired. Refrigerate any leftovers.
