"You may be used to cooking greens quickly on the stovetop. This method produces a different beast with a tender texture, typical of Southern cooking and soul food. It is almost a law to serve this with ham and beans or pulled pork or bbq ribs in some places. The pot liquid is called "pot likker" and is often served spooned over cornbread. Do try this, you won't be disappointed."

Step by Step Method

Step 1

Wash greens and cut out thick stems.

Step 2

Stack greens in a pile, then roll up like a cigar, and then slice.

Step 3

Place sliced greens into crockpot with remaining ingredients.

Step 4

Cover and cook on low for 6 hours or on high for 3 hours or until greens are tender.

Gimme some a dat! That's what my neighbor said when he came over and smelled what was in my kitchen cookin! Delicious from the pot to my belly!

I used a ham hock and they came out delicious. I sprinkled hot sauce over the top for a little added heat, but they are awesome with or without heat. These will be made again!
