Southern Red Beans And Rice
"This is not creole (spices) this is a southern recipe. President Jimmy Carter likes red beans and rice but I'm not sure what variety. He showed Roselyn how to make it. So it was probably something his folks made or he learned it at Annapolis. This is a basic version that you make when you are without funds. lol Everyone in the south saved the bacon grease, and it came in very handy before payday. lol But it doesn't have the spices. Can also make bean sandwiches with leftovers (mayonnaise and mashed beans on white bread) and over cornbread. This made more than one meal."

Step by Step Method
Step 1
Soak the beans overnight and drain.
Step 2
Fry the onions, celery and bell peppers in hot bacon grease until translucent in large stockpot.
Step 3
Add water, beans and bay leaf; don't season until end of cooking.
Step 4
Cook until tender and thick about 2 hours.
Step 5
About 90 minutes in, start rice in a covered sauce pan (water ,rice, salt).
Step 6
Can use rice cooker. I love that appliance lol
Step 7
Cook on low covered 20 minutes.
Step 8
Take off heat and leave covered 5 minutes.
Step 9
Fluff.
Step 10
Take bay leaf out and season to taste.
Step 11
Serve beans over rice.
