Ingredients

The ingredients are:
  • 1 pound dry red kidney beans
  • 1 tablespoon bacon grease
  • 1 cup onion, chopped
  • 2 stalks celery, chopped
  • 1 cup bell pepper, chopped
  • 1 bay leaf
  • 7 cups water
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • Rice
  • 7 ounces dry white rice
  • 1/2 teaspoon salt
  • 2 cups water

How to Make

  • Step 1: Soak the beans overnight and drain.

  • Step 2: Fry the onions, celery and bell peppers in hot bacon grease until translucent in large stockpot.

  • Step 3: Add water, beans and bay leaf; don't season until end of cooking.

  • Step 4: Cook until tender and thick about 2 hours.

  • Step 5: About 90 minutes in, start rice in a covered sauce pan (water ,rice, salt).

  • Step 6: Can use rice cooker. I love that appliance lol

  • Step 7: Cook on low covered 20 minutes.

  • Step 8: Take off heat and leave covered 5 minutes.

  • Step 9: Fluff.

  • Step 10: Take bay leaf out and season to taste.

  • Step 11: Serve beans over rice.
