Step 1: Soak the beans overnight and drain.
Step 2: Fry the onions, celery and bell peppers in hot bacon grease until translucent in large stockpot.
Step 3: Add water, beans and bay leaf; don't season until end of cooking.
Step 4: Cook until tender and thick about 2 hours.
Step 5: About 90 minutes in, start rice in a covered sauce pan (water ,rice, salt).
Step 6: Can use rice cooker. I love that appliance lol
Step 7: Cook on low covered 20 minutes.
Step 8: Take off heat and leave covered 5 minutes.
Step 9: Fluff.
Step 10: Take bay leaf out and season to taste.
Step 11: Serve beans over rice.
