Soft Molasses Spice Cookies

"This originally came from F.com, but since their site no longer allows a person to print using Google Chrome, I'm posting it here. Originally it called for rolling and cutting out the cookies, but I don't do that, so technically I've changed it even though everything else is the same. These are incredibly moist, sort-of chewy cookies, and we love them."

Step by Step Method
Step 1
Combine dry ingredients together in a bowl until well-mixed.
Step 2
Combine wet ingredients in a bowl until well-mixed.
Step 3
Gradually add flour mixture to wet ingredients and mix well.
Step 4
Cover and refrigerate dough at least one hour (I've left it up to two days).
Step 5
Preheat oven to 375F; grease baking sheets.
Step 6
Using your hands, roll dough into balls slightly larger than walnuts, then roll in granulated sugar to coat.
Step 7
Place balls about 2 inches apart on prepared baking sheets.
Step 8
Bake at 375F for 8-10 minutes, watching carefully so the bottoms don't burn.
Step 9
Cool completely on wire racks before storing.
