Step by Step Method

Step 1

Cook pasta as per package directions.

Step 2

Meanwhile drizzle just enough oil to cover bottom of a large skillet and bring to medium high heat.

Step 3

Add onions and cook until translucent.

Step 4

Add ground beef, garlic powder, oregano and ground chipotle pepper and cook until meat is no longer pink.

Step 5

Add salt and pepper to taste.

Step 6

Drain pasta when cooked and add to skillet.

Step 7

Simmer on medium heat for 5 minutes.

I made this recipe pretty much as written except for using a whole onion and elbow macaroni. I love how quick and easy this was to make plus DH enjoyed it.

Engrossed

Tasty and Easy! A great recipe is one that still turns out delicious even when you aren't paying attention to what you are doing! I was trying to throw dinner together in a frazzled state of mind, so did things a bit out of order, and then I put my drained cooked pasta back on a lit stove burner and it got a little charred on one side but hey...it added to the smokieness LOL. I used Barilla Plus Rotini, 1lb of lean ground beef, a whole small red onion, a 15oz can of diced tomatoes with green chilies, and added fresh garlic, garlic salt and frozen corn. I also added more than a dash of ground chipotle, so it ended up being too spicy hot for my toddler and Hubby, but I LOVED it especially tossed with some shredded cheese and topped with sour cream. YUMMO! Made for the Billboard recipe tag game.
