Step by Step Method

Step 1

Vegetables ... Add the potatoes, onions and garlic to a 8x8 or 9x9 square pan. For the grill, I use a 8x8 aluminum disposable pan. Add the seasoning, bay leaf, butter, and beer and cover with foil.

Step 2

Grill or Bake ... Medium heat on the grill or 400 degree oven on the middle shelf. Make sure (especially on the grill) to shake the pan often, in the oven, just shake once or twice; cook for 20-25 minutes. Remove the foil and check to see how tender the potatoes are; they probably will have another 5 minutes (approx) to go; and you want a little liquid still in the bottom of the pan so they don't burn. Cook with the foil off another 5-10 minutes until tender and the beer is mostly reduced. Top with the cheese and cook another minute or two until melted.
