Step by Step Method
Step 1
Heat the oil in a frying pan and gently saute the onion for 3 to 4 minutes and then add the spinach and toss over the heat until just wilted, remove from the heat and stir through the tomatoes and dips.
Step 2
Use a serrated knife to slice a 2 to 3cm lid off the top of the loaf and carefully remove the crumbs from the inside of the loaf and break into rough bite size pieces, ensure the walls of the loaf remain intact.
Step 3
Place the loaf onto an oven tray then pour in the dip mixture, cover with the bred lid and place the remaining bread pieces on the tray.
Step 4
Bake in a moderately hot oven 190C for 15 to 20 minutes until crispy and the dip is warmed through.
Step 5
Place onto a serving platter and serve surrounded by the crispy bread.
Step 6
Serve immediately.
