Step by Step Method

Step 1

Preheat oven to 350°F.

Step 2

Cut potatoes into thick slices and place in a large bowl.

Step 3

Add oil and toss to coat well.

Step 4

Place potato slices on baking trays and bake for 30 minutes or until tender.

Step 5

Remove potatoes from oven and cool slightly.

Step 6

To serve, top each potato slice with a little salmon, a teaspoon of sour cream, an egg wedge, and dill sprig.

Step 7

Serve warm.

I had to leave the egg out on these, but they still came out very good, and were well enjoyed. These contain all my favorites, maybe just never combined all together before - and it definitely works. I found it hard to restrain myself from adding capers after reading the word in Twissis' review and they were a perfect complement to them with its tang.

Made for the 1st Time Around Tag Game @ FF&F & for my wkly family brunch. This is truly the perfect party appy for an Icelander. They revere potatoes & smoked salmon! I made some chgs of need & designed to appeal to the Icelandic aesthetic, but feel I stayed true to the heart of the recipe. My DH grocery shopper didn't like the look of the red potatoes, so white potatoes were used w/dry dill since fresh is often hard to find. I added dry dill + a few tiny capers to the sour cream & also a sprinkle of dry dill to top the appys. Yummy good, Teresa! Thx for sharing the recipe w/us.
