Step 1

Mix the brown sugar, pepper and garlic powder together in a small bowl.

Step 2

Pat all over the roast.

Step 3

Place the roast in a prepared smoker and smoke at 275 degrees Fahrenheit for 1 1/2 hours.

Step 4

Remove the roast from the smoker, place on a cutting board, sprinkle with salt and tent with a piece of foil.

Step 5

Allow to rest for 15 minutes before you cut into it.

My hubby wanted to try his new smoker out so we made this prime rib. We didn't smoke ours as long as we wanted rare, about 1 hour was good. It came out super tender with a mild smoky flavor that was just right!
