  • 2 1/2 to 3 pounds beef rib roast (prime rib roast)
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • Good sprinkle fresh ground pepper
  • Salt to taste

How to Make

  • Step 1: Mix the brown sugar, pepper and garlic powder together in a small bowl.

  • Step 2: Pat all over the roast.

  • Step 3: Place the roast in a prepared smoker and smoke at 275 degrees Fahrenheit for 1 1/2 hours.

  • Step 4: Remove the roast from the smoker, place on a cutting board, sprinkle with salt and tent with a piece of foil.

  • Step 5: Allow to rest for 15 minutes before you cut into it.
