"I make this powder every year with peppers from my garden. This powder is great to add to BBQ sauce, chili or soup; it adds a nice smoky flavor with a lot of heat! The color of the powder will depend on which type of chili pepper you are using; I used green chili peppers here so of course my powder is green. I posted 4 pounds of peppers but you can use whatever amount you like."

Step by Step Method

Step 1

Wash the peppers and pat them dry; place in a couple of baking pans on a single layer and into a prepared smoker.

Step 2

Smoke for 3 to 4 hours.

Step 3

Allow to cool and remove and discard the stems while wearing rubber gloves.

Step 4

Place the peppers on a single layer in a food dehydrator and dehydrate until completely dried up, about 4 hours.

Step 5

NOTE: For this next step you should be wearing a mask because the powder gets into your mouth and nose as you breathe.

Step 6

Place the dried peppers a few at a time in a spice grinder and pulverize into a powder.

Step 7

Pour the powder into glass mason jars for future use.
