"My grandmother always served black-eyed peas on New Year's Day, and on the hopes that it really does bring luck for the new year, I always serve them as well. This is this year's recipe, and it is my favorite so far. It is very low in fat, and high in fiber, and may even aid in weight loss :)"

Step 1

Place peas, spices and seasonings, vegetables, stock, and 1 cup water into crock pot.

Step 2

Reserve the other cup water to add later if needed.

Step 3

Cook on low 7 hours, checking on moisture level halfway through. Add the extra cup water if necessary.
