What a delicious recipe...I cut the recipe in half and ended up with enough mixture to make 5 enchiladas...I did add about 1/2 cup of black beans that I had leftover from another recipe...I subbed fresh chopped poblano's instead of the can green chilies...from another recipe...topped with lettuce...chopped cilantro and some low fat sour cream...yum...made for "Alphabet" tag game at FFF...the hubby is having the leftovers for lunch today...he's a happy guy...:)
