Step 1: Preheat oven to 375 degrees.
Step 2: Coat a 9x12 inch pan with cooking spray.
Step 3: Cook sirloin on medium heat until done. Drain meat, and set aside.
Step 4: Add onion to the pan, and cook for 1-2 minutes until soft.
Step 5: Add green chilies to onion, and stir.
Step 6: Add cooked sirloin to onion and green chilies.
Step 7: Mix meat mixture with one can of enchilada sauce and 1/2 cup of Mexican cheese, stir, and cook for 1-2 minutes.
Step 8: Spoon meat onto center of tortillas, and roll.
Step 9: Place tortillas with the seam side facing down into pan.
Step 10: Pour the second can of enchilada sauce over the wrapped tortillas, and sprinkle the remaining 1/2 cup of cheese over top, before placing in the oven.
Step 11: Cook for 20 minutes, and serve.
