Step by Step Method

Step 1

In a large skillet, brown ground beef over medium-high heat. Drain. Stir in tomato sauce, beans, water/bouillion mixture, taco seasoning mix, salt and pepper. Bring to a boil; reduce heat, cover and simmer 15 minutes.

Step 2

Prepare corn muffin mix according to package directions. Drop small spoonfuls of muffin batter over meat mixture in a skillet. Cover and cook over medium-low heat 15-17 minutes or until corn bread is done.

Step 3

Top with cheese and green onion. Cover and cook over low heat until cheese melts.

Great when easy tastes as good as this tamale pie. It's a great combination and comes together to make for a very appealing and best of all great tasting meal. This one will see to plenty of weekend repeats.

This is a very good weeknight dinner. I love corn bread and enjoyed having it as a topping for this casserole. I had to use navy beans and didn't have any green onions but otherwise made this as directed.
