Step by Step Method

Step 1

Slice potatoes into rounds and then place in a bowl and cover with salted water which you added the lemon juice and place in the refrigerator for one hour. Drain.

Step 2

Toss potatoes with oil, salt, pepper and chile powder.

Step 3

Heat an ungreased cast iron skillet on stove or grill (original recipe said to use a grill but we cooked ours on top of the stove).

Step 4

After the skillet is very hot add potatoes and let cook undisturbed for 3-5 minutes; turn potatoes and continue frying for 5-10 minutes or until done.

Step 5

Garnish with parsley or cilantro.

I have a gigantic cast iron skillet and a tiny one. Since I was just cooking only for myself I used the tiny one. It was so delicious that halfway through eating I started a second batch. Next time I'm going big!

I've made potatoes similar to this before...my Mother taught me years ago...so I knew if the pan was very hot that the potatoes would burn...so I heated the cast iron pan to med high...they came out delicious...we enjoyed the touch of chili powder...made for "Billboard" tag game...
