Step 1: Slice potatoes into rounds and then place in a bowl and cover with salted water which you added the lemon juice and place in the refrigerator for one hour. Drain.
Step 2: Toss potatoes with oil, salt, pepper and chile powder.
Step 3: Heat an ungreased cast iron skillet on stove or grill (original recipe said to use a grill but we cooked ours on top of the stove).
Step 4: After the skillet is very hot add potatoes and let cook undisturbed for 3-5 minutes; turn potatoes and continue frying for 5-10 minutes or until done.
Step 5: Garnish with parsley or cilantro.
