Step by Step Method
Step 1
Cook potatoes in heavily salted boiling water.
Step 2
Last 5 minutes add green beans.
Step 3
Meanwhile, pickle onions with vinegar and salt for 10 minutes.

Add the olive oil, oregano, lemon pepper to the bowl of quick-pickled onion and stir well to combine.
Step 5
Add to hot potatoes.
Step 6
Mix let set until cool.
Step 7
Add remaining ingredients (tomato, parsley and olives).
Step 8
Toss and chill.

Season to taste.
