  • Potatoes
  • 1 pound new potatoes (gold or red)
  • 1 tablespoon salt
  • 8 ounces frozen green beans
  • Pickle
  • 1/2 teaspoon kosher salt
  • 2 tablespoons white wine vinegar
  • 1/4 cup red onion, thinly sliced
  • Dressing
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon lemon pepper
  • Salad
  • 1 cup grape tomatoes, halved
  • 1 tablespoon fresh parsley, minced
  • 1/2 cup stuffed green olives, sliced

How to Make

  • Step 1: Cook potatoes in heavily salted boiling water.

  • Step 2: Last 5 minutes add green beans.

  • Step 3: Meanwhile, pickle onions with vinegar and salt for 10 minutes.

  • Step 4: Add the olive oil, oregano, lemon pepper to the bowl of quick-pickled onion and stir well to combine.

  • Step 5: Add to hot potatoes.

  • Step 6: Mix let set until cool.

  • Step 7: Add remaining ingredients (tomato, parsley and olives).

  • Step 8: Toss and chill.

  • Step 9: Season to taste.
