Step 1: Cook potatoes in heavily salted boiling water.
Step 2: Last 5 minutes add green beans.
Step 3: Meanwhile, pickle onions with vinegar and salt for 10 minutes.
Step 4: Add the olive oil, oregano, lemon pepper to the bowl of quick-pickled onion and stir well to combine.
Step 5: Add to hot potatoes.
Step 6: Mix let set until cool.
Step 7: Add remaining ingredients (tomato, parsley and olives).
Step 8: Toss and chill.
Step 9: Season to taste.
