Shrimp Fajitas
"Shrimp Fajitas from Güero's Taco Bar in Austin, TX. Fresh shrimp grilled with tomatillos and mushrooms served with guacamole, grated cheese, Pico de Gallo, sour cream, refried beans, rice and tortillas. They had large plate beans and rice on one side, in center they had guacamole, Pico de Gallo, a pile of cheese and sour cream on other side the shrimp mixture, very pretty. Adriana's Mexican rice would work and I have a couple of refried beans recipes."

Step by Step Method
Step 1
Preheat the oven to 425°F.
Step 2
Place the vegetables onto a parchment-lined baking sheet.
Step 3
Sprinkle oil and some seasoning over them and roast 25 minutes until tender.
Step 4
Use a scraper to pull the veggies to one side.
Step 5
Add the shrimp to the baking sheet.
Step 6
Add oil and seasonings and bake 4 to 6 minutes until juicy and opaque, depending on the size of the shrimp.
Step 7
Sprinkle some lemon juice and lime juice.
Step 8
Add cilantro.
