  • 3 tablespoons fajita seasoning
  • 3 tomatillos, chopped
  • 8 ounces mushrooms, quartered
  • 1 cup green bell pepper, sliced
  • 1 cup onions, sliced
  • 1 lime, sliced
  • 1 lemon, sliced
  • 1 tablespoon fresh cilantro, minced
  • Garnish
  • 1/2 cup guacamole
  • 4 ounces Mexican cheese, shredded
  • 1 cup Pico de Gallo,
  • 2 ounces sour cream
  • 15 ounces refried beans, heated
  • 14 ounces cooked Mexican rice (2 cups)
  • 8 ounces corn tortillas heated

How to Make

  • Step 1: Preheat the oven to 425°F.

  • Step 2: Place the vegetables onto a parchment-lined baking sheet.

  • Step 3: Sprinkle oil and some seasoning over them and roast 25 minutes until tender.

  • Step 4: Use a scraper to pull the veggies to one side.

  • Step 5: Add the shrimp to the baking sheet.

  • Step 6: Add oil and seasonings and bake 4 to 6 minutes until juicy and opaque, depending on the size of the shrimp.

  • Step 7: Sprinkle some lemon juice and lime juice.

  • Step 8: Add cilantro.
