"These are the absolute best shortbread cookies you'll ever have. We have been making these on Christmas since I can remember. Serve these cookies, and all shortbread lovers will be very happy!"

Step by Step Method

Step 1

Preheat your oven to 375 degrees F (190 degrees C)

Step 2

With an electric mixer or stand mixer, you'll whip the butter until it is smooth and fluffy (this is probably the most important step in making these cookies).

Step 3

On low speed beat in the granulated sugar, corn starch and flour. Continue to mix on low for another two minutes, then increase the speed to high for three extra minutes.

Step 4

Place spoonfuls of the mixture on an ungreased cookie sheet, keeping about 2-3 inches of space between the cookies.

Step 5

Bake for about 8-10 minutes (keep a close eye on these to ensure they don't get too brown on the edges).

Step 6

You can finish the cookies with the powered icing sugar and colored sprinkles for an extra touch.

I made a half batch and tried one with a coffee and enjoyed but I mainly made them for the DH and well he scoffed of 6 of them so that was half the batch gone in one sitting. The DH did mention that he would prefer them a little crispier as they were on the chewy side so I think it was a case of personal preference but will be making again though maybe at a slightly higher temperature to get that crispier taste but still very enjoyable thank you Blinky made for What's on the Menu tag game at FF&F.
