Step by Step Method

Cook beef and onion

Add mushrooms

Drain grease if you need to

Add peas and carrots and beef broth

Cut the potato like a boat

Put meat mixture inside potato skin

This was a fun baked potato. And it made a TON of mashed potatoes to put back on top of the meat... which delighted my kids. I made as directed (except for omitting the mushrooms), even though my daughter picked out every single pea and set it aside in a moody 'tween protest of green vegetables. This was well enjoyed for supper.

Daily Inspiration

Very tasty and a great alternative to a Shepherds Pie casserole. I made the potatoes in advance and then reheated the potato to mix with the cheese, butter and cream. Enjoyed the ground beef with the addition of mushrooms including the normal peas and carrots.
