Scalloped Potatoes For Two

"Since I sometimes have to cook for just me, I've been on a search for recipes that make enough for just one or two people. So when I came across this one in the TOH 2002 Annual Recipes that was sent in to them by Edith Jennings of Prarie City, Iowa, I knew I had to try it.The time for peeling the potatoes has been included in the prep time. I guess if you wanted to speed up the time it takes to prepare this recipe, you could slightly cook the potatoes in the microwave or on the stove top. The addition of the French Fried Onions was my idea. Sumitted to " Zazz " on August 6th.,2012"

Step by Step Method

Step 1

Place potatoes in a greased 1 quart baking dish, set aside.

Step 2

In a small pan, melt margarine and then add flour cook until the flour taste disappears ( About 3 to 4 minutes ).

Step 3

Add the milk a little at a time, bring to a boil then reduce heat and stir until slightly thickened.

Step 4

Add cheese,salt, pepper, and worcestershire sauce and stir until cheese is melted.

Step 5

Cool sauce slightly, pour over potatoes.

Step 6

Cover potatoes and bake for 25 minutes at 375 degrees, remove cover and top with french fried onion, and paprika.

Step 7

Bake for another 20 minutes or until potatoes are fork tender.

Step 8

Let " rest " for 10 minutes, so sauce will thicken.

We just loved this recipe! I make a similar recipe, but wanted to try one that was just a little different to mine, and this recipe did not disappoint. I doubled the recipe to serve 4 and we all loved it. Apart from doubling the recipe everything was made as per recipe, I even had a packet of fried onions which I used on top. Creamy, cheese flavoured deliciousness, which made for the perfect side to our dinner. DS even packed the leftovers to take to work, and forgot them, first thing he did when he got home was to reheat it and demolish it! lol

I scaled up for 3 and as my Carisma potatoes (low gi potatoes) were on the small side I used 5 and made in an 8x8 pan and got 3 layers of potatoes and had enough for 4 serves so have frozen the left over serve. As we don't get French-fried onions here in Australia (or not that I know of) I thought of caramelizing some onion and putting that on top when I served only to discover I had no onions, so I went with the paprika option and sprinkled some grated sharp cheddar mixed with some smoked cheddar and then put on the smoked paprika and we thoroughly enjoyed. The only oops I had was that in using the Australian tablespoon I ended up with an extremely thick sauce so thinned it down with some more milk (our tablespoon is 20ml and the American is 15ml). Thank you Chef shapeweaver for a lovely side to our dinner tonight.

Turned out to be enough for three, but that is okay, I'll have some for lunch tomorrow. :) Great flavor. The Worcestershire is a nice touch. I skipped the fried onions and added some more cheese on top for the last twenty minutes and got a nice crust. Will be making these again.

Made these as directed without the optional french fried onions and really enjoyed this. I sliced these with a mandolin so the cook time was a bit less because of how thin they were.(40 minutes) Made for the Alphabet Soup Recipe Tag game.
