Step by Step Method

Step 1

Wash and peel the sweet potatoes. Slice them in wedges or cut in 1 1/2 inch pieces.

Step 2

Peel the onions, halve them, and cut in 1 inch chunks or wedges.

Step 3

Toss the sweet potatoes and onions in olive oil and add the cajun spice mix. Toss again and spread separately on a pan with low sides to allow browning.

Step 4

Bake in a preheated 450 degree oven for 35-40 minutes until a fork pierces the sweet potatoes easily.

Wonderful tasty side dish, I used creole spice mix with the olive oil, delicious. I cut mine in one inch rounds, just one for the 2 of us and about a quarter of an onion. I'll be making this one again and again, we loved them, thanks for posting.

So easy and so good. I used Mrs Dash extra spicy - it was just right. I used a golden yam and cut the recipe back to 1 yam. Right into my do again recipe book Thanks Mary for a lovely side dish

I cut this recipe in half for just the 2 of us, & that still left us with a nice bit of leftovers which were just as enjoyable the 2nd time around! Made as given in the recipe except that I did leave the sweet potatoes unpeeled, since we like that part as much for the nutritional value as for the taste! Absolutely delicious & a nice change from the sweeter SP dishes! Thanks for sharing the recipe!
