"A copycat of McDonald's Sausage McMuffin breakfast sandwich. The original Egg McMuffin uses back bacon (Canadian bacon in the US) in place of the sausage patty. Regional variations include a thin fried chicken patty, a steak patty, a spam slice and two strips of bacon in place of the sausage patty or Canadian bacon."

Step by Step Method

Step 1

In a small frying pan or on a grill, heat patties on medium heat turning occasionally for even browning. If refrigerated, cook 6-7 minutes or until hot. If frozen, cook 8-10 minutes or until hot.

Step 2

Spray the inside of muffin ring with cooking spray and place into a second small frying pan or on grill. Pour in just enough water to cover the base then bring to the boil (about 1-2 minutes).

Step 3

Crack the eggs into the rings. Break both yolks. Cover the eggs and cook until firm (two to three minutes).

Step 4

While the sausage patty warms and the eggs cook, split the muffin into two halves. Toast muffin until golden brown in a toaster or on the grill.

Step 5

Using a pastry brush, brush melted butter lightly on both toasted muffin halves.

Step 6

Place the slice of cheese on one toasted muffin half. Remove egg from the ring and top cheese slice with cooked egg. Add sausage patty. Cover with other muffin half.

Step 7

Serve immediately or wrap in wax paper for later.
