Step by Step Method

Step 1

Slice the potatoes in half and rinse them well.

Step 2

Place the potatoes in a pot and cover with water and vinegar; stir in the salt.

Step 3

Bring the potatoes to a boil on the stove-top and continue to cook for 10 minutes.

Step 4

Drain the potatoes and allow to cool completely.

Step 5

Place the par-boiled potatoes in a large bowl and mix with the oil and melted butter.

Step 6

Pour the potatoes on a parchment paper lined baking sheet and cook in a preheated 425 degree Fahrenheit oven for 30 minutes.

Step 7

Remove the potatoes from oven and sprinkle with the kosher salt.

Step 8

These are similar to your dill pickle spuds without using up my pickle juice. We love them both. I admit, I did not wait for the potatoes to cool before sticking them in the oven. They turned out just as wonderful as all the other reviewers reported. I added a seasoned salt blend that my friend brought me from Alaska. Next time I'll be a purist and used non-flavored salt!

These are really good and cooked through. Crispy on the outside, soft on the inside - and that vinegary taste? Wonderful! Unfortunately, our burgers were done before the potatoes got as browned as I would have liked - but that's not the recipe's fault. Next time, though.... they'll be perfect! Thanks for sharing - these are going into our regular rotation!

Yum...I really don't care for the salt and vinegar chips but I do enjoy my salt and vinegar chicken wings...I cut the recipe in half for the two of us...I used petite potatoes...I cut a slice of skin off around the potatoes so the liquid could penetrate them...I tossed them in a grill basket and they came out perfect...crisp on the outside and moist on the inside...made for "Billboard" tag game...

Wow, Wow and wow again! These potato's are wonderful! I love salt and vinegar chips and I love potato's so this recipe was a no brainer for me to try! I made exactly as written and we LOVED this recipe. The potato's were of the perfect texture, soft and moist inside, perfect on the outside and the flavors.... well what can I say, salt and vinegar all the way. This is my all time favorite potato recipe which I will be using quite often. Thanks Bea.
