Step by Step Method
Step 1
Preheat oven to 350 degrees F. and grease a casserole dish.
Step 2
Heat the vegetable oil over medium heat in a large skillet and add the onions and bacon.
Step 3
Once the bacon is cooked through, add the tomato paste and ground round, stirring until the meat is cooked through.
Step 4
Next, add the tomatoes, salt, pepper, and 1 C. of water and simmer for about 30 minutes.
Step 5
Then, mix in the rice, beaten eggs, and 1/2 C grated Parmesan cheese.
Step 6
Pour the entire mixture into your greased casserole dish.
Step 7
Add 3 more cups of water and stir well.
Step 8
Cover your casserole dish and bake for approximately 30 minutes.
Step 9
Take it out of the oven and give it a good stir before topping it with the additional 1/2 C grated Parmesan cheese.
Step 10
Bake for about one more hour, covered for about 30 min. and uncovered the last 30 min., until the top gets nice and browned.
