Ingredients

The ingredients are:
  • 2 tablespoons oil (vegetable or canola oil)
  • 1 yellow onion (finely chopped)
  • 2 ounces sliced bacon (2 slices, chopped)
  • 1 tablespoon tomato paste
  • 3/4 pound ground round
  • 1 can (14.5 ounce) diced tomatoes
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup water
  • 240 grams dry rice (uncooked 1 1/2 cups)
  • 4 large eggs (beaten)
  • 1/2 cup grated Parmesan cheese
  • 3 cups water
  • 1/2 cup grated Parmesan cheese (to top)

How to Make

  • Step 1: Preheat oven to 350 degrees F. and grease a casserole dish.

  • Step 2: Heat the vegetable oil over medium heat in a large skillet and add the onions and bacon.

  • Step 3: Once the bacon is cooked through, add the tomato paste and ground round, stirring until the meat is cooked through.

  • Step 4: Next, add the tomatoes, salt, pepper, and 1 C. of water and simmer for about 30 minutes.

  • Step 5: Then, mix in the rice, beaten eggs, and 1/2 C grated Parmesan cheese.

  • Step 6: Pour the entire mixture into your greased casserole dish.

  • Step 7: Add 3 more cups of water and stir well.

  • Step 8: Cover your casserole dish and bake for approximately 30 minutes.

  • Step 9: Take it out of the oven and give it a good stir before topping it with the additional 1/2 C grated Parmesan cheese.

  • Step 10: Bake for about one more hour, covered for about 30 min. and uncovered the last 30 min., until the top gets nice and browned.
