"There are lots of recipes for roasted potatoes. Here's one of mine that we enjoy. In this photo, I cooked them a little too long....but they still tasted good. lol."

Step by Step Method

Step 1

In a medium bowl, combine lemon juice, oil, thyme, garlic salt and pepper.

Step 2

Add potatoes; toss to coat.

Step 3

Place in 8 inch square baking dish that has been coated with nonstick cooking spray.

Step 4

Bake, uncovered, at 450F for 40 minutes or until potatoes are tender, stirring occasionally.

We loved these crispy potatoes! The lemon flavor was just enough to taste but not overpower. I cooked mine for another 20 minutes to get them super crispy. We loved, loved, loved. Thank you!

This made a wonderful side dish for a yummy omelet...had it for our breakfast for how nice and crisp they came made the perfect amount for two people...thanks for sharing your recipe...

Great potatoes. Loved the hint of lemon. I don’t keep garlic salt so used garlic powder and a little salt. Nice side for a hamburger steak.

I made this using whole baby potatoes and omitted the garlic salt but used garlic infused oil and a good sprinkle of salt. This made for a fantastic side to Jerk Chicken. Great recipe, it will be a repeat here for sure.
