Step by Step Method
Step 1
Preheat oven to 400F.
Step 2
On a large, non-stick (or parchment covered) baking sheet, toss florets and onion with 2 tablespoons olive oil.
Step 3
Put garlic cloves in a small piece of foil and drizzle with 1/2 teaspoon olive oil; seal foil and pace on pan with cauliflower.
Step 4
Roast for 15 minutes.
Step 5
Stir or flip pieces; and roast for 15 more minutes until tender.
Step 6
Transfer veggies and garlic to a food processor.
Step 7
Add ricotta, salt and pepper.
Step 8
Whirl until desired consistency is reached, scraping down bowl as needed.
