Ingredients

The ingredients are:
  • 625 gram cauliflower head (1 large head, cut into florets)
  • 1 onion, coarsely chopped (small onion)
  • 2 tablespoons olive oil
  • 1/2 teaspoon olive oil
  • 3 cloves garlic (large cloves, peeled, left whole)
  • 1/2 cup ricotta cheese (extra-smooth ricotta)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: On a large, non-stick (or parchment covered) baking sheet, toss florets and onion with 2 tablespoons olive oil.

  • Step 3: Put garlic cloves in a small piece of foil and drizzle with 1/2 teaspoon olive oil; seal foil and pace on pan with cauliflower.

  • Step 4: Roast for 15 minutes.

  • Step 5: Stir or flip pieces; and roast for 15 more minutes until tender.

  • Step 6: Transfer veggies and garlic to a food processor.

  • Step 7: Add ricotta, salt and pepper.

  • Step 8: Whirl until desired consistency is reached, scraping down bowl as needed.
