Step 1

Preheat your oven to 400f.

Step 2

Place the flowerets and whole garlic cloves in a large bowl, Drizzle olive oil then sea salt and pepper over, then toss using your hands (do not be cheap with the olive oil, use lots!)

Step 3

Place into a 9x13 inch baking dish (in one layer).

Step 4

Roast for 15 minutes. Remove from the oven then toss everything. Place back in oven and roast until fork-tender (about 10 minutes).

Don't let the 20 cloves of garlic scare you - it is wonderfull. The roasting makes the garlic sweet and mellow. The cauliflower still has some crunch. A do again recipe for sure.
