"These carrots make the perfect side dish. Roasted and glazed for a sweet flavor. I did not cover mine with foil as written and they came out really well, so I think if you like you could skip this step, although you may need to cook a little longer. I also do think to give these a great flavor for a Christmas side you could add add cinnamon and/or nutmeg powder to the dish."

Step by Step Method

Step 1

Preheat the oven to 425 degrees Fahrenheit.

Step 2

Using a medium saucepan add the butter and cook over medium high heat; whisk for a few minutes until the butter starts to become frothy and brown; once the butter is browned, add in the honey and garlic and remove from heat.

Step 3

In a large bowl add the carrots and drizzle the sauce on top of carrots and toss until carrots are evenly coated; spread carrots evenly on a large baking sheet & season with salt and pepper.

Step 4

Cover carrots with foil and bake for approx 10 minutes; after this time remove the foil, gently toss the carrots and bake carrots uncovered for an extra 5-10 minutes to brown the carrots until they are tender and roasted.

Step 5

Transfer to a serving dish and garnish with chopped parsley. Serve immediately.

Delicious! I can see how cinnamon/nutmeg would bring the Christmas flavour to these wonderful carrots! I made half the recipe and baked them in my countertop oven. I covered them for part of the time. They were perfect as DH said! Will be making them again for Christmas (if we can wait that Thank you Tisme for sharing your recipe!
